Baked Seafood Paella

Berurut sudah, makan ubat pun sudah..tapi sakit kat belakang ni masih tak baik gak...apa HAL??? Huhuhu..kata mak cik urut tu masuk angin...hmmmm dah makan ubat ubat angin dan sapu minyak Nona Roguy tapi sakit nya tak juga ilang...adoilaaaaaaa..mungkin sebab dok dukung Umar...mungkin dok sebab angkat barang berat..huwaaaaa

Bila sakit belakang ni buat apa pun tak besh...suami belikan nasi ayam pun rasa tak syedap padahal orang lain kata sedap je nasi ayam tu...angin di belakang pun dah merebak ke kepala...mula lah ia berdenyut nyuttttt nyuttttt...

Dan nak masak pun rasa tak larat...lagi tak larat kalau nak bersiap dan keluar makan kat luar...maka mieza bedal masak all in one macam paella rice ni...

Resepi asal dari Lobster Paella...diubahsuai sebab kat umah ni tak der lobster cuma ada udang galah jer...bedal je la kan...mieza tambah sedikit mozarella di saat akhir sebab suami sukakan cheezy baked macam ni..


BAKED SEAFOOD PAELLA

Ingredients
  • ¼ cup (60ml) extra virgin olive oil
  • 2 beef/chicken frankfurter, cut into ¼ inch thick slices
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell better, cut into 1 inch strips
  • 2 tomatoes, cubed
  • 2 cups (400g) short grain rice, washed and drain-I used basmathi
  • 2½ cups (600ml) chicken stock
  • 1½ tsp salt
  • ¼ tsp pepper
  • ½ tsp saffron threads
  • 12 oz (340 gm) salmon, skin removed and cut into ¼ inch thick slices
  • 1 lb (450g) mussels, scrubbed and debearded- I omitted this as it was not available from my fridge
  • 4 lobster tails about 5 oz (140g) each, cut into half lengthwise- ganti dengan udang galah
  • ½ cup chopped flat leaf parsley
  • 1 lemon, cut into wedges
I added some shredded mozarella



Instructions

1. Heat olive oil in a 34 cm paella or large shallow pan (I used 8 inch x 8 inch oven proof casserole). Brown the frankfurter for about 3 to 4 minutes. Remove and set aside.
2. Saute onions, garlic, red bell pepper, and tomatoes for 3 minutes. Add rice and stir fry for another 3 minutes.
3. Pour in chicken stock and white wine.
4. Crumble in the saffron. Season with salt and pepper. Return browned frankfurter to the pan. Cover, reduce heat and allow it to simmer for 12 minutes.
5. Preheat oven to 350°F (180°C).
6. Arrange salmon and mussels all around the pan. Then place lobster halves on the top(I seasoned the salmon and prawns and grilled them all first). Cover and cook for 6 minutes.
7. Remove lid and transfer pan to the oven. Sprinkle some shredded mozarella. Bake uncovered for 10 minutes to finish cooking.
8. Remove from oven and let it sit on stove top lightly covered with aluminum foil for 10 minutes.
9. Serve with chopped parsley and lemon wedges.


Sedap sangat...suami suggestkan next time mieza serve this paella with some salsa. Lagi sedap katanya...
