Asam Pedas Ikan Keli



Sebenarnya mood nak masak dah tak de coz dok teringat nak masak kat kitchen kat umah baru. Tapi bila perut berdendang sayang mintak diisi, terpaksalah gak masuk dapur. Feel nak masuk umah baru is all over me, tapi memang banyak lagi lah yang pending. Oleh kerana makan ni amat penting dalam idup setiap individu maka, meja makan sememangnya lah menjadi perhatian utama aku and husband. Walau pun bajet dah lari, dan bajet semakin nipis, menyebabkan kami terpaksa postphone niat nak cat umah, terpaksa tidur atas toto coz dah tak de bajet nak beli tilam and katil, tapi meja makan mesti diutamakan hehehe. Dah ada dah satu yang aku and hubby berkenan, alaaahhh kat Leon Yew lah kat mana lagi kalau kat Tanjong Malim ni, bukan ada lorenzo ke, fella design ke harvey norman ke. The table is square, 8 seater, dan warna of coz lah mahagony coz nak bagi sama dengan kitchen cabinet. The price of that dining table is RM2200. Mahal, tapi aku dah suka hehehe. Jadi sebelum meja baru sampai, tak aper lah kita makan nasi dengan asam pedas ikan keli ni kat meja lama je. Kata Along, "Kenyang gak mama", heh memang la kenyang, feel tu yang lain... By the way, aku sebenarnye bukan lah gemar sangat dengan ikan keli ni. The only ikan keli yang aku suka is bila ikan keli tu dibakar garing dan dimakan dengan air asam. Lain dari tu aku tak makan. Tapi hubby suka ikan keli masak asam pedas. So presented here is the asam pedas ikan keli...


ASAM PEDAS IKAN KELI

2 ekor ikan keli - cukup la untuk laki aku sorang makan. Hari ni harga dia 2 ekor ni is RM2.60.
Daun kesum
1 kuntum bunga kantan - belah 2
2 batang serai - diketuk
2 biji buah tomato - belah 4
4 keping asam keping
Minyak untuk menumis

Bahan untuk dikisar:
4 ulas bawang merah
2 ulas bawang putih
6 biji cili api
3 biji cili merah
2 cm halia
1 cm kunyit hidup

Cara-cara:

1. Panaskan minyak dalam periuk. Tumis bahan kisar hingga garing dan pecah minyak.

2. Masukkan serai dan secukupnya air untuk kuah. Masukkan juga buah tomato, bunga kantan, dan asam keping.

3. Bila kuah dah mendidih, masukkan ikan dan juga daun kesum. Masak hingga ikan masak. Rasakan garam, gula dan masamnya.

Ayam Goreng Berempah



Everyone's favorite fried chicken. Memang sedap ayam goreng rempah ni. Sometimes i prepared this chicken with the chicken rice. Sometimes just makan with the white rice pun sodap. Sum other times tu just goreng untuk meratah je. Kalau out of ideas nak masak ape, just cook this Spicy Fried Chicken, wahhh macam kfc lak...hehehe...

AYAM GORENG BEREMPAH

200 gm ayam - aku suka wings and ribs
2 cm kunyit hidup
1 camt ketumbar
1 camt jintan manis
1 camt jintan putih
3 batang serai
1 inci halia
1 inci lengkuas
3 camb serbuk kari
Garam
3 ulas bawang putih
5 ulas bawang merah

Cara-caranya:

1. Semua bahan-bahan kecuali ayam di masukkan ke dalam blender dan dikisar hingga lumat.

2. Perapkan ayam yang telah dicuci bersama bahan kisar selama 15 minit.

3. Sediakan kuali, gunakan minyak masak hingga tenggelam ayam, in other words, goreng ayam dalam minyak penuh.

4. Bila dah masak and garing, angkat dan toskan minyak lebihan. Boleh makan dengan nasi putih, dan asam rebus keladi tu. MMMM sedap sungguh!

Cheesy Seafood Macaroni

I have been sick for one week. For what reason, i had no idea. The head is throbbing, the nose is runny, bad cough, and bad sore throat. I have been on medical leave for two days now and hoping to be able to return to work tomorrow as i'm very worried about the students who are facing the final exams very very soon. When i woke up this morning, there was not much in my pantry and fridge to cook for my breakfast. Along is not schooling, she kept on telling me that she was hungry and i felt so weak to drive for some food for both of us. Thank God hubby had sent wawa to the babysitter earlier this morning. If both of them (Wawa and Along) were around, they kept on arguing over anything that the house had turn into some niosy place that i can't bear. But if they are not around, i miss the arguments, crying, shouting sound between both of 'em. Huhhh that's the beuty of having kids i guess. When i peeked into my pantry, i saw 2 packets of mac n cheese by san remo we bought from Cold Storage One U last month. There were a few cans of baked beans, and some sardins. These will do, for today....instant pasta will do..for a sick mother...and her lovely daughter...


CHEESY SEAFOOD MACARONI

1 packet of instant mac n cheese by san remo. I haven't tried another brand. I am a san remo's loyal customer.
1 camb of butter
1 cup of fresh milk
2 cups of water
6-7 prawn - peel the skin
3 sticks of crab meat - cut into 2 cm stick
1 tomato - diced
2 camb of fried garlic

Methods:

1. In a non stick pan, heat the butter. Then pour milk, water and mac n cheese. Cook until the macaroni is tender. Add water if necessary.

2. When the pasta is tender, add the seafood and cook for a while until the seafood is cooked. Add in the diced tomatoes. Stir. Do not add more salt as the san remo mac n cheese is salty enough unless you are really a salt-person.

3. When its done, sprinkle some chopped English parsley and fried garlic when serving. Delicious.

Today for breakfast, Along and i had some of this cheesy seafood pasta, some baked bean which i heated in the microwave, some bread and scrambled eggs. Guess these can keep us going until hubby come home in the afternoon for lunch. Sedihhhnyaaaaa...

Asam Rebus Keladi

Last couple of weeks, if i'm not mistaken, both of my sisters in law dropped by. They went home in Alor Setar to collect Dik Yah's new BLM. She was very excited about the car, as she waited quite long for it. On their way back to Putrajaya they dropped by and dropped me some of this keladi. Actually this is the first time ever i tried to prepare and cook keladi by myself. Usually, i asked my mom, or my sister or whoever was available at that point in time to be my involuntarily assistant. I didn't dare coz i'm afraid my hand will be itching all over and i guessed i was right. Right after i was done preparing this keladi, my God, my hands were itching all over and i kept on scratching and the hand had turn red and sore. Uhhhh at that time, i regret i ever played with this keladi. I wish i had asked sumone to prepare that for me or better yet, i wish i had bought the prepared ones from the wet market. But i can't go back, can I? What shud i do then? I washed my hands with dettol, it didn't work. I used asam jawa, also it didn't work. I put some minyak panas, it didn't work either, i smear some nivea, it didn't produce any good result anyway. My Godddd, i felt like crying. Uhukkkssss. Then i turned to my mum, and she said i could put some cooking oil all over my hands and put it near the fire, it other words, u smoke your itchy oily hands laaaaa....and Thank God! It finally worked. But I learned a lesson today...if you are working with keladi, make sure wear your glove! Be safe than itchy! Heheheh


ASAM REBUS KELADI

4 batang keladi
2 ubi keladi
2 ulas bawang putih
5 ulas bawang merah
4 cili kering
2 cm belacan
Segenggam ikan bilis
5 keping asam keping
1 inci lengkuas - diketuk
1 inci halia - diketuk
1 cm kunyit hidup
Beberapa tangkai daun kesum
Garam dan gula to taste

Cara-caranya:

1. Batang keladi disiat kulit arinya dan dipotong 1 inci panjang dan direndam air. Ubinya dibuang kulit dan dipotong nipis.

2. Cili kering, bawang putih, bawang merah, kunyit, dan belacan dikisar halus.

3. Rebus ubi keladi sehingga empuk. Bila dah empuk, masukkan air secukupnya untuk kuah. Masukkan bahan kisar, ikan bilis, halia, lengkuas, asam keping, daun kesum dan batang keladi.

4. Rebus sehingga batang keladi lembek. Rasakan manis, masin dan masamnya. Boleh dimakan bersama nasi putih. Memang sedap hirup kuah asam pedas ni MMMMm YUmmmmY

Lala Masak Lemak Cili Api


Sesetengah orang panggil siput ni retak seribu. Aku panggil lala. Walau ape pun nama yang dipanggil dia memang kegemaran anak dara aku yang sulung tu. Masak ape pun dia akan belasah sampai licin dengan syarat jangan pedas sangat. Lagipun masak lala ni memang sekejap je. Dia tak perlu rebus lama-lama macam nak buat sup daging etc. Kejap aje dah siap. Lala ni tak dijual everyday kat pasar, tatau la kat pasar lain. Kalau kat pasar Benrang Stesen memang jarang-jarang ada dijual. Kalau ada memang aku jarang miss untuk membeli. Tapi make sure jangan beli yang tertutup rapat coz usually dalamnya penuh dengan lumpur. Kalau kat Tg Malim ni sekilo lala harganya RM5. Cukup la untuk aku 4 beranak. Sekarang ni aku memang tak sempat nak masak. Firstnya sibuk dengan nak pindah umah baru. Umah baru dah siap, kalau diizinkan Allah SWT sebelum raya haji nak pindah masuk. Kira macam raya haji kat umah baru la. So bila tengok dapur kat kuarters tu mood nak masak macam fade je coz teringat kat dapur dan kitchen cabinet baru kat umah baru yang mencecah RM12,000. Memang den bangkrap lepas niiii. Hari ni makan je la lala masak lemak cili api ni...


LALA MASAK LEMAK CILI API

1 kg lala - dicuci, buang lumpur dan tos
3 ulas bawang putih - ditumbuk
5 ulas bawang merah - ditumbuk
10 biji cili api - ditumbuk
3 batang serai - diketuk
3-4 keping asam keping
1 cm kunyit hidup - ditumbuk
1 mangkuk santan
2 biji tomato buah - belah 4



Cara-cara:

1. Tumbuk bawang putih, bawang merah, kunyit, dan cili api.

2. Dalam one pot, masukkan semua sekali bahan ie santan, bahan tumbuk, asam keping, jangan lupa the main ingredient which is the lala dan masak hingga santan mendidih dan lala masak.

3. Rasakan garam gula dan juga masamnya. Boleh letak tomato buah yang dibelah 4. Senang dan cepat dan tak pakai banyak bahan menu ni. Untuk orang-orang yang on the go!

Sayur Lemak Labu dan Udang


This is among my favorite sayur. Memang suka dengan sayur labu, tapi hubby tak suka coz he said labu ni berangin sikit nanti dia sakit perut. Bila aku masak this sayur selalunya yang melantak was me, my mum and along. Hubby akan pandang je. Heehhehe rugi dia. Masak dia cukup senang coz main campak and reneh je. Tapi untuk buang angin dia of coz la require banyak accessory nya ie daun kunyit, serai, halba etc. Orang dulu-dulu makan semua benda tapi depa ada cara macam mana nak neutralize kan angin di dalam labu..





SAYUR LEMAK LABU DAN UDANG

1/4 biji labu yang sedang - kupas kulit dan potong kiub
3 ulas bawang merah - tumbuk
1 ulas bawang putih - tumbuk
1 batang serai - titik
2 helai daun kunyit - siat-siatkan
Segenggam udang kering - rendam dan tumbuk pecah
1 camt halba
100 gm udang basah
1 mangkuk santan pekat
Garam dan gula melaka

Cara-caranya:

1. Masukkan labu yang telah dipotong ke dalam periuk. Masukkan air agak-agak tenggelam semua labu dan rebus labu hingga empuk. (Tak lama masak labu untuk empukkan dia)

2. Bila labu dah empuk, jangan dibuang airnya sebaliknya masukkan santan pekat dan semua bahan-bahan yang lain serta renehkan sehingga santan mendidih sekali saja. Jangan lama-lama khuatiri santan pecah minyak.

3. Sayur labu ni dimasak sedikit manis, jadi lebihkan sikit gula dari biasa. Selalunya aku pakai gula melaka kerana rasanya akan ada kelainan.

4. Sayur labu ni boleh dimakan dengan nasi putih.

Sup Ayam dan Leeks


Susahnya nak cari masa nak blogging. Sekarang ni kelas EMBA kat UITM dah cuti sem tapi busy lak dengan nak pindah umah baru. And sad but true, sekarang ni demam la pulak, but apa-ape pun thank God it wasn't Cikukunya. Bila tengok friends kena serang dengan cikukunya and demam sampai 2 weeks long rasa gayat and takut la pulak. Tapi ni dah seminggu demam, berat badan pun dah susut. That day time demam i cooked this menu..for myself. Ye la nak manja dengan sape lagi, terpaksa la manja dengan diri sendiri. Last week kena sakit mata lak...haii nak buat camna sabar je lah. Hari ni actually dapat mc from the clinic tapi terpaksa gak come to work coz kesian kat students silibus tak finish lagi and the finals is just around the corner. This week and next week, ada course terpaksa lak attend.


SUP AYAM DAN LEEKS

Ayam - bahagian yang bertulang, this parts memang best untuk dibuat sup. Bersihkan.
1 bungkus rempah sup bunjut
3 ulas bawang merah - tumbuk
2 ulas bawang putih - tumbuk
1 inci halia - diketuk
1/2 camt ketumbar - giling lumat
1/2 camt jintan manis - digiling lumat
1/2 camt jintan putih - digiling lumat
2 batang leek - potong 1 inci panjang
1 inci kulit kayu manis
1 kuntum bunga lawang
5 biji buah pelaga
3 kuntum bunga cengkih
1 mangkuk air untuk kuah sup
minyak untuk menumis
bawang goreng, daun sup, limau nipis dan hirisan cili api untuk hiasan

Cara-cara:

1. Panaskan minyak dalam periuk. Tumis bawang putih, bawang merah, halia dan semua rempah wangi hinggi garing dan naik bau. Masukkan pula rempah giling dan tumis hingga garing.

2. Bila dah garing masukkan sup bunjut, ayam, leek dan air. Reneh hingga ayam empuk. Rasakan garam gula.

3. Semasa menghidangkan hias dan rasakan dengan bawang goreng, daun sup, limau nipis dan cili api untuk sedikit rasa kepedasan. Kalau demam memang sedap hirup sup ni...

Nasi Dagang




It has been quite some time since my last sign in kat blog ni. My schedule was really packed all October. Sepanjang Oct i have been very busy with the study, assignments and exam. Last week the whole week i was in Perlis for a course. Last weekend baru la ada opputinity nak masak. Besides Zaimi's sisters dropped by and my second big brother from Kelantan visited, so i decided to cook some nasi dagang. Actually this is my favorite. My hubby also kind of like it tho' it is kind of milky coz the rice is cooked using the coconut milk and the chicken, or some prefer ikan tongkol, is milky as well. It's not really good for those who are trying to be on diet. But for me, i hentam je. Eat everything but only a lil. Suka, makan banyak, tak suka, makan sikit. But try everthing. Usually people eat nasi dagang with gulai ikan tongkol. But i don't really like ikan tongkol so i chose gulai ayam. Sometimes I cooked gulai daging to go with the nasi dagang. That will work too. Some eat nasi dagang with gulai telur, but that is not my kind anyway. But the original recipe is nasi dagang and gulai ikan tongkol. What most important here is how to cook nasi dagang. Some people use combination of regular rice and sticky rice, but i use nasi dagang rice which is a lil bit darker than the regular white rice. So presented here is my version of nasi dagang.


NASI DAGANG


1 kg beras nasi dagang
1 mangkuk santan pekat
1/2 mangkuk santan cair
1 camb halba
5 inci halia - dimayang
7 ulas bawang merah - dimayang
5 ulas bawang putih - dimayang
garam dan gula secukupnya

Cara-caranya:

1. Beras direndam bersama halba semalaman.

2. Toskan beras yang telah direndam dan dikukus di dalam pengukus sehingga setengah masak.

3. Santan pekat dimasak bersama halia, bawang merah, bawang putih, garam dan gula hingga mendidih sekali sahaja.

4. Apabila nasi sudah setengah masak, angkat dan digaulkan dengan santan cair. Gaul rata-rata hingga santan cair meresap masuk ke dalam beras yang setengah masak.

5. Kukus semula beras tadi sehingga empuk. Bila dah empuk, angkat dan digaul sekali lagi dengan santan pekat yang sudah dimasak.

6. Nasi dagang boleh dimakan dengan gulai ikan, ayam, daging, atau telur serta acar mentah.
