Gulai Kawah - Masak dalam kuali jerrrrrr



Last 2 weeks, we went to PD for a so-called vacation lah..brought the kids main pasir and mandi laut..they always loved the beach! why ye? kids la katakan..katanya nak buat istana pasir..i dun really favor beaches, takut, ngeri tengok ombak..but i'm glad the kids are happy, their happiness is my happines :) ngeh ngehhh

So on the way back from PD, we dropped by this one eating place in Bangi (i forgot the name, sowwwyyyy).. a very nice place, with interesting decoration..where i spotted they served this gulai kawah in a kawah definitely! Since i have been craving for gulai kawah for soooo long, without any hesitation aku pun dig la gulai tersebut for a full bowl..unfortunately, the taste was awful! Huwaaaa frustnya den! Langsung tak sama dengan gulai kawah from my place (Kelantan that is!)



Maka disebabkan ke'frustan' yang amat tinggi, it has forced me to cook it myself. Though i didn't cook it in a kawah but the taste is much much better than the one we had in Bangi..Alhamdulillah...siap simpan esoknya makan cicah dengan sweet bun lagi...sedap! I alwiz loved gulai kawah..



Ini resepi turun temurun from my family..may be sama je dengan resepi orang lain..but i got this recipe from my late grandmother, down to my mother, and then to me..very happy to share the recipe with the visitors :)


GULAI KAWAH
Recipe: words and observation from my late grandmother

Bahan-bahan: (for a family of 5 = 3 adults, 2 kids)
300 gm daging - bersih dan hiris nipis
1 mangkuk santan
2-3 camb rempah gulai darat - jadikan pes, aku beli kat Pasar Siti Khadijah, Kelantan
Sedikit gula melaka
2 camb kerisik
3 keping asam keping
Minyak untuk menumis
3 biji kentang - belah 4

Bahan tumis:
1 inci kulit kayu manis
3 kuntum bunga lawang
3 biji buah pelaga
5 kuntum bunga cengkih

Bahan kisar:
5 biji bawang merah
3 biji putih
1 inci lengkuas
1 inci halia
Sedikit kunyit
4 biji cili kering
1 camt ketumbar - goreng tanpa minyak dulu


Cara-caranya:

1. Panaskan minyak dalam kuali. Tumis bahan tumis hingga wangi dan masukkan kisar. Tumis lagi hingga garing dan pecah minyak. Kemudian masukkan pes rempah gulai darat. Kacau hingga garing. Hati-hati jangan sampai hangit. Kemudian dimasukkan kerisik. Kacau sebati.

2. Masukkan daging bersama secawan air dan reneh hingga daging empuk. Biar daging betul-betul empuk. Jika daging belum empuk boleh tambah air.

3. Bila daging dah cukup empuk, masukkan santan, kentang, asam keping, gula melaka dan garam. Renehkan hingga kentang empuk dan gulai pecah minyak dengan menggunakan api kecil sahaja.

4. Hidang dengan nasi putih panas. Aku cicah roti juga. Sodap sangat!

Gulai kawah ...ermmm sedap tu . Bahan2 tu sama dgn saya masak kalau nak buat gulai kawah. Dekat sini mana nak dapat gulai kawah yg betul2 sedap. Semua mcm kari daging je.Nampak daging singghe kat blog Mieza , kecur air liur , my favourite. Emak & ayah Yatie org Kelate , tu la selera lebih ke arah pantai timur.

@yatie: yatie ore kelate kat area mana tu? mieza kat kuala krai..walau di mana berada tekak mieza ni tetap suka masakan kelate..ni kepingin nak makan lompat tikam ni :)
